 Ingredients to make Aam Papad:

Ripe sweet mangoes – 1 kg

Sugar – 250–300 grams (according to taste)

Lemon juice – 1 teaspoon (for preserving)

Ghee – to grease the papad thali or plate

Black salt or cardamom powder (optional – according to taste)

Method to make Aam Papad:

1. Extract the pulp of mango: – Peel the ripe mangoes and extract the pulp. After that remove the seeds and fibers.

2. Make a puree in a mixer: – Grind the mango pulp well in a mixer till it becomes very smooth.

3. Start cooking on gas: – Put the mango puree in a heavy bottom pan and add sugar to it. Cook on medium flame while stirring continuously. This process can take about 20–30 minutes to complete.

4. Thick and shiny mixture: – When the mixture thickens and starts leaving the pan, add lemon juice to it. This protects the papad from spoiling for a year.

5. Spread on a ghee-coated plate: – Grease a large steel or thali with light ghee, and spread the prepared mixture as thinly as possible.

6. Drying in the sun: – Keep it in bright sunlight for 2–3 days until the papad dries completely. Cover the plate and keep it inside at night.

7. Peel, cut and store: – When it is completely dry and does not stick to the hand, peel it and cut it into desired pieces. Keep it in an airtight container, and store in a cool, dry place.

Storage tips to last for a year:

1. Keep it in an airtight container, and protect it from moisture.

2. It will last even longer if stored in the fridge.

3. Keep checking from time to time to ensure that there is no fungus.
