Ingredients:
- 1 cup pasta (whole wheat or regular)
- 1 tbsp butter or olive oil
- 1 tbsp whole wheat flour (atta) or oat flour
- 1 cup milk (dairy or plant-based)
- ½ cup boiled and blended cauliflower or cashew paste (for extra creaminess)
- ½ tsp black pepper
- ½ tsp oregano
- ½ tsp chilli flakes
- Salt to taste
- ½ cup sautéed vegetables (bell peppers, mushrooms, corn, etc.)
Instructions:
- In a pot, cook the pasta as per instructions.
- In a pan, heat butter or olive oil and saute whole wheat flour or oats flour for a minute. Saute it until it turns aromatic.
- Slowly add milk while stirring the mixture to avoid lumps.
- Let this cook until the mixture thickens.
- Now add the boiled cauliflower or cashews to make a smooth paste.
- Mix it in the sauce to get extra creaminess.
- Now, add black pepper, oregano, chilli flakes, and salt from the top.
- Mix it well.
- Toss the sauteed vegetables and mix them with the pasta.
- Cook for another minute and serve hot.
