Necessary Material-
- 2 medium size brinjal (cut into pieces)
- 1 cup yogurt (swept)
- 1 onion (finely chopped)
- 1 tomato (puree)
- 1 spoon ginger-garlic paste
- 1/2 spoon turmeric powder
- 1 spoon coriander powder
- 1/2 spoon cumin
- Taste
- Fresh coriander leaves (to decorate)
Curd Eggplant How Make-
- To make curd brinjal, first heat oil in a pan and add cumin seeds. When cumin seeds start crackling, add onion and fry till it becomes golden.
- Now add ginger-garlic paste and cook for one minute.
- Then add tomato puree, turmeric, coriander powder and salt.
- Cook the spices until the oil starts separating.
- Now add eggplant pieces, mix well and let it cook for 5-7 minutes, until the brinjal becomes soft.
- Then add the watched curd and reduce the heat and cook for 5 minutes, keep stirring in between.

- 1 cup yogurt (swept)
- 1 onion (finely chopped)
- 1 tomato (puree)

- 1 spoon ginger-garlic paste
- 1/2 spoon turmeric powder
- 1 spoon garam masala
- Taste
- Fresh coriander leaves (to decorate)
Curd Cauliflower How Make-
- Heat oil in a pan and add cumin seeds.
- When cumin seeds start crackling, add onion and fry till it becomes golden.
- Now add ginger-garlic paste and cook for one minute.
- Now add tomato puree, turmeric, and salt to it.
- When the masala becomes thick, add cabbage flowers and cook on medium flame for 5 minutes.
- Now add the watched curd, mix well and then cook on low flame for 10 minutes, until the cabbage becomes soft.
- Sprinkle garam masala and decorate with coriander.
- Serve the prepared vegetable with hot bread.

- When the cumin starts crackling, add chopped onion and fry it till it becomes golden.
- Now add tomato puree, turmeric, cumin powder and salt and cook the spices for 5 minutes.
- Then add chopped gourd pieces and fry for 2-3 minutes.
- Now add a little water and cover the pan and let the gourd cook on low flame for 10-12 minutes, until the gourd becomes soft.
- After the gourd is cooked, reduce the heat, add the torn curd and mix it well.
