To make batter
- A cup fine semolina
- Three quarter cup water
- 1 tbsp lemon juice
- 1 teaspoon eno
- Salt taste
For tempering
- 1 tbsp oil
- Half a teaspoon of mustard
- Half a teaspoon cumin
- 1 teaspoon gram lentils
- 1 teaspoon urad dal
- 5-6 curry leaves
- A green chili (finely chopped)
- 1 teaspoon grated ginger
- 6-8 nuts
- 2 tablespoons of grated carrots
- 1 tbsp chopped coriander
Without Curd Of Forn Idli How Make-
- First of all, heat a pan on medium heat.
- Now add 1 cup of semolina and fry it lightly for 4-5 minutes, until light fragrance and light golden color comes.
- Keep stirring it continuously. But do not fry too much. Now let it cool down.
- Now heat 1 tbsp of oil in the same pan.
- Then add mustard seeds and let it crackle.
- Now add cumin, gram dal, urad dal and fry till it becomes light golden.
- Then add ginger, green chillies, curry leaves and cashew nuts and fry for 1 minute.
- Now turn off the gas and put it in the roasted semolina.
- Now mix roasted semolina and prepared tempering in a bowl.
- Add salt, carrots and coriander.
- Then add lemon juice and about three quarter cups of water.
- Mix well and prepare the batter.
- Cover it for 10-15 minutes so that the semolina swells.
- Check the consistance of the batter just before making the idli. If it is too thick, add some more water.
- Now add baking soda or eno to it.
- Mix gently in the same direction but do not overmix it.
- Now apply some oil in the mold of idli and grease it.
- Immediately after adding the eno, put the batter in the molds.
- Steam in idli cooker or steamer on medium heat for 10-12 minutes.
- Check with thorn or toothpick. If it comes out clearly, Idli is ready.
- Now let it cool for 2-3 minutes, then gently remove it from the molds.
- Serve hot-hot idli with coconut chutney, sambar or tomato sauce.
