Ingredients:

  • 3 ripe Alphonso mangoes
  • 1–2 tablespoons sugar
  • 1/4 teaspoon cardamom powder
  • 2–3 tablespoons milk
  • A few strands of saffron
  • Chilled water or ice cubes

Method:

  1. Peel and chop the mangoes, discarding the seeds.
  2. Blend the mango pulp in a mixer with sugar, cardamom, and a little milk or chilled water until smooth.
  3. Add saffron strands for extra richness and blend again.
  4. Chill the aamras in the fridge for 30 minutes before serving.

For Puri

Ingredients:

  • 2 cups whole wheat flour
  • 1 tablespoon semolina
  • Salt to taste
  • Water
  • Oil

Method:

  1. In a mixing bowl, add wheat flour, semolina, and salt. Mix well.
  2. Slowly add water and knead into a firm, smooth dough. Let it rest for 15 minutes.
  3. Divide the dough into small balls and roll them into small discs.
  4. Heat oil in a deep pan. Once hot, fry puris one at a time, gently pressing to puff them up.
  5. Fry until golden brown, then drain on paper towels.
