½ tsp garam masala
1 tsp kasuri methi
1 tsp lemon juice
1 tsp oil
¼ tsp salt
Ingredients for tandoori flavour
2 tbsp oil
2 small pieces of hot coal
½ tsp ghee
Method
- First of all, mix flour, salt, and oil in a large bowl. Add water slowly and knead a soft and smooth dough. Cover it and keep it for 30 minutes.
- Heat oil in a pan and add garlic, and sauté lightly. Then add onion and sauté till golden.
- Add grated carrot and cabbage, and mix well, and cook till slightly soft. Add black pepper, salt, and coriander leaves and mix, and let cool.
- Make small balls of dough and roll them thinly. Place the stuffing in the centre of each rolled roti and fold the edges to give a shape of your choice.

- Boil water in a steamer. Place the momos on the steamer tray so that they do not touch each other. Steam for 10 to 12 minutes or till they start looking shiny.
- Combine curd, ginger-garlic paste, turmeric powder, red chilli powder, garam masala, kasuri methi, lemon juice, oil, and salt in a bowl. Mix well.
- Put the cooked momos in the marinade and wrap well. Let it marinate for at least 1 hour.
- Heat 2 tbsp oil in a pan and add the marinated momos. Cook on medium flame for 2 minutes, then flip to cook well on all sides.
- Place a small bowl in the centre and place hot coal pieces in it. Pour ghee on top and immediately close the lid. Allow to smoke for 2 to 3 minutes.
- If you don't want to allow it to smoke, then you can also shallow fry the marinated momos in a little oil till they turn light golden and slightly crispy.
- Garnish the tandoori momos with chaat masala and coriander leaves and serve hot with spicy chutney.
