Serves: Four

Ingredients

Three large cucumbers, thinly sliced

One red onion, thinly sliced

226g low-fat cottage cheese

Three tablespoons of white vinegar

Two tablespoons of thinly sliced fresh chives

Two tablespoons of chopped fresh dill

Sprinkle of salt

Sprinkle of black ground pepper

Method

Toss the sliced cucumbers and red onion together in a large salad bowl.

In a blender, add the cottage cheese, white vinegar, chives, dill and seasoning; blitz till smooth. Add to the salad bowl. Stir until well-coated.
