If you have made more masala while making stuffed vegetables, then do not use it unnecessarily. Rather keep it in the fridge and make a new vegetable with it the next day. Here we are going to tell you the method of making a new potato vegetable with stuffed vegetable masala.
Ingredients for making Dhaba-style spicy vegetable
Leftover masala
2-3 medium-sized boiled potatoes
1 onion
1 tomato
1/2 tsp turmeric
1 tsp coriander powder
1/2 tsp red chili powder
1/2 tsp garam masala
Some green coriander
2 tbsp oil
Method
Now it is time to make this special vegetable. For this, first heat oil in a pan and add chopped onion and fry it till it becomes golden brown.
When the onion turns golden, add finely chopped tomatoes and cook till it becomes soft. When the tomatoes are cooked, add turmeric, coriander powder, red chili and salt in the pan.
After this, you have to add bitter gourd masala to it and then fry it well. When it is fried properly, check it. After frying properly, the masala starts releasing oil.

After this, add boiled potatoes to it. If you want to make the vegetable more tasty, then lightly fry these potatoes. Now after mixing the potatoes in the masala, cook it on low flame for 5-7 minutes so that the potatoes and the masala get absorbed well into each other. Finally, add garam masala and green coriander and turn off the gas. Lastly, add finely chopped coriander to it and serve it with paratha.
