Mango Pickle Recipe

Ingredients:

  • Raw mango – 1 kg (cut into medium pieces)

  • Fennel (Fenyl) – 2 tablespoons

  • Fenugreek seeds – 1 tbsp

  • Turmeric Powder – 2 teaspoons

  • Red chili powder – 2 tablespoons (as per taste)

  • Mustard seed – 1 tbsp

  • Salt – 100 grams (or as per taste)

  • Mustard Oil – 250 ml (Heat cooled)

  • Asafoetida – 1/2 teaspoon

Method of preparation:

1. Prepare mangoes:

Wash raw mangoes and dry it well. There should be no moisture. Then cut them into medium shape.

2. Fry spices:

Fry fennel, fenugreek seeds and mustard seeds lightly (without burning), then coarsely grind.

3. Pickle mix:

Take chopped mangoes in a large pot. Add crushed spices, turmeric, chili powder, asafoetida and salt to it. Mix well.

4. Add oil:

Heat mustard oil and let it cool completely. Then add it to mangoes and spices and mix well.

5. Safe Storage:

Fill the pickle in a clean and dried glass jar. Keep 4-5 days in the sun every day, keep stirring with a spoon in between.

Tips:

  • Pickle -pouring utensils and spoon should be completely dry and clean.

  • After 4–5 days the pickle becomes edible and is safe for several months.
