Mumbai: In the realm of Indian cuisine, traditional snacks often carry a legacy of rich flavours and cultural significance. However, with the growing emphasis on health and wellness, there’s a delightful shift towards reinventing these classics with a nutritious twist. One such innovation is the Sprouts Appe—a wholesome, protein-rich snack that doesn’t compromise on taste.
Sprouts Appe, made primarily from moong sprouts and besan (gram flour), is a testament to how simple ingredients can be transformed into a delectable dish. Incorporating fresh greens like bathua or spinach not only enhances its nutritional profile but also adds a burst of colour and flavour.
Sprouts Appe Recipe/ Sprouts Appam Recipe
Ingredients:
- 2 cups green moong sprouts
- 1 cup gram flour (besan)
- A handful of bathua leaves or any green vegetable of your choice
- 1-2 inches of fresh ginger
- 1 teaspoon red chilli powder
- 2 teaspoons roasted cumin powder
- Salt to taste
- 1 teaspoon baking powder or ENO fruit salt
- Oil or desi ghee for cooking
Method:
- In a blender, combine the green moong sprouts, gram flour, chopped ginger, and a small amount of water. Blend until you achieve a smooth, batter-like consistency.
- Transfer the batter to a mixing bowl. Add red chilli powder, roasted cumin powder, and salt. Mix well to incorporate the spices evenly.
- Introduce the chopped bathua leaves (or your chosen greens) into the batter, ensuring they are well-distributed.
- Just before cooking, add the baking powder or Eno fruit salt to the batter. Mix gently to retain the airiness, which will help in making the appe fluffy.
- Heat the appe pan on medium flame and lightly grease each cavity with oil or desi ghee.
- Pour the batter into each cavity, filling them just below the rim. Cover the pan and cook until the base of the appe becomes firm and golden brown.
- Using a skewer or fork, gently flip each appe to cook the other side. Continue cooking until both sides are evenly browned.
- To ensure they are cooked through, insert a skewer or fork into the centre of an appe; it should come out clean.
- Once done, remove the appe from the pan and serve hot with your favourite chutney or sauce.
Sprouts Appe is more than just a snack; it’s a celebration of health and flavour. By integrating nutrient-dense ingredients like moong sprouts and fresh greens, this dish offers a guilt-free indulgence that’s both satisfying and beneficial.
Whether you’re looking to diversify your breakfast options or seeking a wholesome snack, Sprouts Appe stands out as a versatile and delightful choice. Embrace this nutritious twist to traditional Indian snacks and relish the goodness in every bite.
