Tehri recipe
Ingredients (Serves 2–3)
- Basmati Rice – 1 cup
- Potatoes – 1 large
- Carrots – 1 medium
- Green peas – ½ cup
- Cauliflower florets – 1 cup
- Onion – 1 (sliced)
- Tomato – 1 (chopped)
- Green chillies – 1–2 (slit)
- Ginger-garlic paste – 1 tsp
- Cumin seeds – 1 tsp
- Bay leaf – 1
- Turmeric powder – ½ tsp
- Red chilli powder – ½ tsp
- Garam Masala – ½ TSP
- Salt – to taste
- Mustard oil or ghee – 2 tbsp
- Water – 2 cups
- Coriander leaves – for garnish
- Lemon juice – optional
Steps to prepare:
- Heat mustard oil or ghee in a pressure cooker and add cumin seeds along with a bay leaf.
- Once they splutter, put the onion, garlic and saute well.
- Now add ginger-garlic paste, green chilli and saute.
- Add tomatoes and cook until they are soft.
- Mix turmeric, red chilli and salt into the mix.
- Add chopped potatoes, carrots, peas, and cauliflower. Stir well and let them cook for 3–4 minutes on medium flame.
- Wash the rice properly and drain it.
- Mix the rice in the pressure cooker and stir it.
- Cook it for 1 whistle and let it naturally cook in the pressure release.
- Squeeze lemon, garnish with coriander, and serve hot with dahi.
